Ingredients

50ml London Dry Gin
Lemon
25ml freshly squeezed lemon juice
25ml Triple Sec
Egg White
Peychaud bitters
Ice cubes

Directions

Pre-chill glass by adding ice
Peel lemon skin for garnish
Squeeze half a lemon
Separate egg white
Measure 25ml of lemon juice into shaker
Add 25ml of Triple Sec into shaker
Add egg white
Add 50ml London Dry Gin into shaker
Shake ingredients without ice to break texture of egg
To create aeration in drink, throw it a few times
Add ice to drink mixture in the shaker and give it a firm shake
Discard ice from glass
Pour drink through a fine strainer into chilled glass
Use knife to carve a line through middle of lemon peel, twist peel and add to brim of glass as garnish
Optional: Add dash of Peychaud bitters
